How to eat your way out of diseases?

The glycemic index is a numeric scoring system on how fast carbohydrates are absorbed into your blood stream as blood sugar. It is founded by Dr. Jenkins of University of Toronto; a study he had done to find food groups most suitable for diabetics.

So why are we looking at it for ourselves, assuming we don’t have any health complications? The truth is, you may not have any medical conditions today, but with today’s diet, I promise you that each of us is heading towards that direction. It is a matter of when oppose to ‘IF’.

This is what happens when you consume a high glycemic meal, such as instant oatmeal, bagel, muffin, croissants, scones…your blood sugar is spiked! First note that our body operates on a narrow range of blood sugar level. When this range is thrown off, our brain goes into a state of emergency! Too much, we are drowning in blood sugar! As a result, our body over-stimulates the release of insulin. Insulin’s job is to transport blood sugar to be utilized as energy or stored as fat. Insulin does its job very well, you can count on it! As they are at work, your blood sugar is going down as fast as it went up. An hour later, your body goes into another state of emergency, that you need more food! Some may refer this to emotional or stress eating, but the truth is your body is telling you that you’re starving!

You will notice in your energy level is low, may have trouble focusing and concentrating, and weight gain.  This cycle causes oxidative stress, and triggers inflammatory immune responses. 85 to 90% of our foods today are processed and high in glycemic. 20 to 30 years later of such diet leads to degenerative diseases including diabetes, heart diseases, obesity…
